MY BIG BATCH COOKING

I am feeling quiet brilliant right now! I made dinner and three freezer meals in 17 minutes! My new dinner strategy is to make once and eat four times. Went to Costco, bought the ingredients, assembled and viola - four meals for less than $7.00 each and it only took 17 minutes! Delicious and nutritious and prepared ahead of time leaving me more time to do what I really like to do - and that is not cook. How great is that!

Sweet and Sour Meatballs

I lrg pkg of frozen meatballs (1/4 of pkg per bag)
4 cans pineapple chunks (1 can per bag)
4 green bell peppers (cut in chunks) (1 per bag)
4 cups brown sugar (1 cup per bag)
1/2 cup corn starch (1/8 cup per bag)
2 2/3 cup vinegar (2/3 cup per bag)
1/2 cup soysauce (1/8 cup per bag)
4 freezer bags

1. Label bags
2. Distribute ingred evenly among all bags. Remove excess air, seal bags and freeze.
3. Bake 350 for 1/2 -1 hour covered or 3-4 hours on low in crockpot, or 7 hours on high

(best to take bags out of freezer the night before to unthaw)

Also, I make one big batch of rice and divide it into freezer bags. Reheat in covered casserole or put entire freezer bag into pot of boiling water until heated through.
