MEATLOAF

I know that all of you tried last weeks recipe for the green smoothie. Good isn't it! I had so many positive comments that I thought that I would post another recipe that you may like. Again, I thank you for taking the time to comment. It makes me feel like someone actually reads my blog (I know that my girls do) and it gives me the incentive to blog on. The best part of blogging is choosing different backgrounds to my post and this weeks blog requires a meatloaf picture (if there is such a thing). I really am hard up for a topic to blog about when I have to resort to recipes two weeks in a row. Anyways...
I have been using a lot of ground turkey these days. It is a flavourless, dry meat that is low in fat which is hard to choke down unless you do something fairly interesting with it. More healthy than ground beef, but boring...Until I rediscovered meatloaf in the form of turkey loaf muffins.

1/2 cup grated onion
7 tbsp ketchup, divided (I used salsa)
1 1/4 lb. lean ground turkey
3 cups shredded broccoli coleslaw, chopped (I used chopped broccoli and chopped spinach.)
1/2 cup egg substitute (I used an egg)
1/2 cup quick cooking oats
2 tsp garlic
1 tsp salt

Preheat oven to 350.
Spray 9 compartments of a muffin pan with spray,
Combine all ingredients except 3 tbsp ketchup in a mixing bowl
Distribute mixture evenly among cups.
Brush with I tsp ketchup on top of each meatloaf.
Bake until firm with lightly browned edges, 30-35 minutes.

  1. i cant comment on your other posts most of the time, but i can comment on this one i guess. I love mini meat loafs. yum. AND to comment on your most recent post, DONT get the louis vuitton. It's tacky. The coach one is much better and suits you better.
