KEFIR

Have I told you about my love affair with kefir (and I don't mean Kiefer Sutherland because a)he is not my type,  b)I love my kefir to be pure and not to be a Hollywood druggie Has Been and c) I am a married woman.   
         
(He clearly needs kefir) 



I have been on a kefir kick lately.  I have been obsessed with it and can't get enough.
Kefir has a yogurt like consistency, 

I have been making my own sauerkraut and kefir.  I started buying kefir and found it too expensive and inconvenient and it was often loaded with sugar.  I am now making it and always have fresh kefir on the go.  

Kefir is a complex fermented milk product that contains bacteria and yeast.  (sounds yummy, I know)
It is a potent probiotic and helps protect against gastrointestinal diseases.  It helps balance the natural flora in your intestines, and strengthens your immune system.    It is also high in calcium and contains vitamin K2, and is beneficial to bone health along with other amazing properties.  I sleep better, have less sugar cravings, clearer skin and have a feeling of overall wellness.  I almost feel holy when I drink
kefir.  It is so purifying.    
                                            

As I write this, I have a kefir mask on.  It does wonders for your skin.  Because it is high in lactic acid,  it lightens skin discolorations and removes dead skin particles.  It is another way to use this amazing, easy to easy to make product.  

(this of course is not me - just a representation of me wearing my kefir mask.  I don't have that thick of lashes nor that color of hair.  But after using a kefir mask several times a week, I am starting to look more like her) 

How I make my kefir:
Start with 1 L whole milk, heat to near boiling - but not boiling,  cool.  Add kefir grains or a kefir dry probiotic packet (you can get this at a health food store), cover and let it rest for 24 hours in a warm place. After 24 hours, the kefir will have thickened to a yogurt like consistency.  Give it a shake to mix and place in the fridge.  Enjoy as you would yogurt.
