NEW TWIST ON AN OLD FAVOURITE

I came up with something today that I think is quite delicious.  I had some beautiful leftover granola that I had made to eat in yogurt parfaits.  Only problem is, I rarely eat yogurt anymore and my nut filled, dried fruit, loaded with goodness granola was not being eaten.  Adding chocolate seemed the perfect answer since,  although I am trying to be wheat free and dairy free - I still consume copious amounts of chocolate.  Love my chocolate.  I revised a chocolate no-bake cookie recipe into a granola no bake cookie.  They turned out to be very scrumptious, somewhat healthy and a good way to use up some leftovers.  




2 cups white sugar
1/2 cup milk
1/2 cup butter
3 cups granola
1 tsp vanilla
3 tbsp cocoa powder


  In a saucepan over medium heat, combine sugar, milk, cocoa  and butter.  Bring to a boil, stirring occasionally, the boil 4-5 minutes.  Remove from heat and stir in the granola and vanilla.  Spoon onto waxed paper and allow to cool.
